Salmon and miso noodles

This is one of our fave evening meals. It is really quick and incredibly tasty!

Ingredients

  • 2 salmon fillets
  • Miso paste , 1 tbsp (17 g)
  • Sweet potato and buckwheat noodles (125 g)
  • Mushrooms (150 g)
  • Broccoli,  (100 g)
  • 1 garlic clove
  • Coconut aminos or soy sauce, 2 tbsp (36 g)
  • Cashew Nuts (30 g)
  • Coriander

Method

  1. Heat oven to 190 and place salmon on a tray
  2. Chop broccoli and mushrooms
  3. Heat non stick wok and put garlic, mushrooms and broccoli in with the soy sauce
  4. Place salmon in oven for 8-10 minutes
  5. Stir miso paste in to wok and cook for 3 minutes
  6. Pour boiling water in and place the noodles in and combine well
  7. Simmer for 5-6 minutes
