Jerk turkey meatballs


Everyone loves a meatball

Turkey has a reputation for being dry and tasteless. NOT THESE! So quick and simple these have become a staple meal prep recipe. 

  • 500g 5% fat turkey mince
  • 3 tablespoons jerk seasoning
  • ½ courgette grated
  • ½ red onion chopped
  • 1 egg
  • Chopped coriander
  • 1/2 tsp coconut oil
  1. Mix everything in a large bowl
  2. Wet hands and make into 16 meatballs
  3. Fry in coconut oil until brown on outside
  4. Place on baking tray and bake for 20 minutes
  5. There will be fat that has collected around the meatballs. Just use tongs to remove the meatballs from the tray and place on plate

Pair with some homemade coleslaw or sweet potato wedges and greens
