Chia seed scrambled eggs with avocado smash

  • Coconut Oil, 1 tsp (5 g)

  • 1 large ripe Avocado, (100 g)

  • Lime, 1 juice of (5 g)

  • Raw Egg, 4 eggs

  • Almond Milk, 3 tablespoon (63 g)

  • Chia seeds, 1 tbsp (12 g)

  • Salt and pepper

  1. Mash the avocado flesh roughly with a fork and stir in the lime juice. Season with sea salt and pepper

  2. Beat the eggs with the milk in a bowl. Add the chia seeds and season

  3. Heat the coconut oil in a non stick pan set over a low to medium heat

  4. Pour in the egg mixture and stir until the eggs start to scramble and set

  5. When there is no liquid left in the pan, remove from the heat.
