Spiced cod and turmeric cauliflower

White fish is an excellent source of protein, iodine and minerals. It cooks very quickly so perfect for a mid week meal. Pair it with some health boosting veggies and spices.

  • Greek Yogurt (0%) (100 g)

  • 1 garlic clove

  • Coriander - small bunch

  • Mint 1 pinch

  • Cumin, 1 tablespoon (7 g)

  • Turmeric, 1 tablespoon (7 g)

  • Cod 1 lb (433 g)

  • Coconut Oil, 1 tbsp (13 g)

  • Cauliflower, 1 head small (260 - 300g)

  • Salt and pepper

  1. In a bowl, mix the yogurt and garlic with the chopped mint and coriander, a pinch of Turmeric and the cumin until well combined.

  2. Add the cod, turn to coat and set aside to marinate.
    Preheat the oven to 200C.

  3. Put the coconut oil into a roasting tray and place in the hot oven until melted. 

  4. Add the cauliflower, sprinkle over 1 teaspoon of Turmeric, season with a little salt and pepper and toss to coat.

  5. Roast in the oven for 40 minutes, adding the fish for the final 12 minutes.
