Spiced cod and turmeric cauliflower
White fish is an excellent source of protein, iodine and minerals. It cooks very quickly so perfect for a mid week meal. Pair it with some health boosting veggies and spices.

Greek Yogurt (0%) (100 g)
1 garlic clove
Coriander - small bunch
Mint 1 pinch
Cumin, 1 tablespoon (7 g)
Turmeric, 1 tablespoon (7 g)
Cod 1 lb (433 g)
Coconut Oil, 1 tbsp (13 g)
Cauliflower, 1 head small (260 - 300g)
Salt and pepper

In a bowl, mix the yogurt and garlic with the chopped mint and coriander, a pinch of Turmeric and the cumin until well combined.
Add the cod, turn to coat and set aside to marinate.
Preheat the oven to 200C.
Put the coconut oil into a roasting tray and place in the hot oven until melted.
Add the cauliflower, sprinkle over 1 teaspoon of Turmeric, season with a little salt and pepper and toss to coat.
Roast in the oven for 40 minutes, adding the fish for the final 12 minutes.
