Turkey sweet potato frittata

We love a frittata at pH Nutrition. This recipe can be manipulated using any veg. A great useitallup recipe! Perfect meal prep that can be used at any time of the day

  • 8 large eggs, beaten

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon cayenne pepper

  • 4 rashers of lean bacon

  • 1 tbsp (15 mL) coconut oil

  • 2 large sweet potatoes

  • 300g lean turkey mince

  • 1 medium onion, diced

  • 1/2 green pepper - diced

  • 1/2 red pepper - diced

  • 1 large tomato - diced

  • Garlic

  • Large handful of spinach

  • Salt and pepper


  1. Preheat the oven to 180°C

  2. In a large bowl, beat the eggs together with the smoked paprika, cayenne, salt and pepper.

  3. Chop sweet potato into small cubes around 2cm, place in microwave for 7 minutes until tender.

  4. Heat a large non stick pan over medium-high heat, add the coconut oil. Then, sauté the bacon, garlic, tomato, peppers and onion until it’s cooked through, about 8 minutes.

  5. Add the turkey in and cook brown off slightly.

  6. Stir through spinach until wilted

  7. Pop the sweet potato in and then pour the egg mixture over. 

  8. Cook on hob for 4 minutes then pop under a medium grill until golden on top

  9. Make sure handle is put of the oven if its plastic!

  10. Cut into 4 portions.

  11. This is great served with a fresh green salad. Top with some salsa or avocado

This will keep in the fridge for 5 days so can be used for the weeks lunches or dinners.
