Warm salmon and lemon quinoa and bean salad

  • Salmon, Fresh, 4 fillet (500 g)

  • Quinoa, raw (200 g)

  • Olive Oil, 1 tsp (5 g)

  • Courgette, 2 small (236 g)

  • Kidney Beans, Canned, 1 can

  • Sesame seeds, 1 tbsp (9 g)

  • Avocado, 1 large (80 g)

  • Lemon Juice and Zest, 1 tablespoons

  • Almonds (40g)

  • Salt and pepper

  1. Preheat the oven to 180c. Cook the salmon for about 15 minutes and cut into large flakes

  2. Meanwhile cook the quinoa according to the instructions on the packet

  3. Cook the courgettes on a hot pan with oil for about two minutes each side

  4. Stir the lemon zest and juice into the quinoa

  5. Mix in the beans and seeds. Season to taste

  6. Top with salmon, avocado, almonds and courgettes.
