Beetroot pancake sandwich

A good pancake can be used as a pre or post workout snack. Easy to digest these are a staple in our plans. Great for competitions also. Make into a balanced meal by adding nut butter in the middle on them or topping with some Coconut yoghurt.

Ingredients

  • 100g beetroot
  • 100g oats
  • 30g protein
  • 250ml water
  • 1 tsp cinnamon
  • 1 banana
  • 3 tsp nut butter

Method

1. Peel beetroot and cut into wedges
2. Put water, beetroot, oats, cinnamon and protein in blender and blitz for 30 seconds
3. Heat a non stick pan and pour a small amount of mixture in. Repeat so you have two pancakes in the pan
4. Wait until it starts to bubble and then flip with spatula
5. Cook for further 20 seconds
6. Repeat for rest of mixture

Then spread 1/2 tablespoon of nut butter and some banana in each of the pancakes. Then fold!
