Pesto quinoa pasta with veg and walnuts

 

A protein packed veggie meal using the awesome clear spring Pea and quinoa pasta. Excellent meal prep recipe.

 Ingredients 

  • Pea and quinoa pasta 250g
  • Quinoa raw (150 g)
  • Broccoli, 1 head
  • Cherry tomatoes (150g)
  • Spinach, 3 large handful (150 g)
  • Pesto, 4 tbsp (64 g)
  • 3 garlic clove (12 g)
  • Vegetable Stock (400 ml)
  • Walnuts (60 g)
  • Olive Oil, 1 tsp

Method

  • Chop the garlic and cook gently in a pan for 3 minutes
  • Add the boiling stock to the pan with the quinoa and pesto - stir and cover. 
  • Cook for 5 minutes
  • Meanwhile chop the broccoli into small florets
  • Chop the tomatoes into halves
  • After 5 minutes add the broccoli, tomatoes, spinach and the pasta. May need to top up the water slightly here
  • Gently simmer covered for 6-8 minutes (until the broccoli is slightly soft) 

    Portion out and top with chopped walnuts
