Turkey sweet potato frittata
We love a frittata at pH Nutrition. This recipe can be manipulated using any veg. A great useitallup recipe! Perfect meal prep that can be used at any time of the day

8 large eggs, beaten
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
4 rashers of lean bacon
1 tbsp (15 mL) coconut oil
2 large sweet potatoes
300g lean turkey mince
1 medium onion, diced
1/2 green pepper - diced
1/2 red pepper - diced
1 large tomato - diced
Large handful of spinach
Salt and pepper
Preheat the oven to 180°C
In a large bowl, beat the eggs together with the smoked paprika, cayenne, salt and pepper.
Chop sweet potato into small cubes around 2cm, place in microwave for 7 minutes until tender.
Heat a large non stick pan over medium-high heat, add the coconut oil. Then, sauté the bacon, garlic, tomato, peppers and onion until it’s cooked through, about 8 minutes.
Add the turkey in and cook brown off slightly.
Stir through spinach until wilted
Pop the sweet potato in and then pour the egg mixture over.
Cook on hob for 4 minutes then pop under a medium grill until golden on top
Make sure handle is put of the oven if its plastic!
Cut into 4 portions.
This is great served with a fresh green salad. Top with some salsa or avocado
This will keep in the fridge for 5 days so can be used for the weeks lunches or dinners.
