Prawn and spinach pasta

  • Whole Wheat Pasta (300 g)

  • Coconut Oil, 1 tbsp (13 g)

  • 1 garlic clove (4 g)

  • Parsley, 1 chopped handful (40 g)

  • Lemon Juice, 1 cup (244 g)

  • Water, 0.25 Cup (100 g)

  • Prawns (300 g)

  • Spinach, 1 bag (340 g)

  • Salt and pepper

  1. Cook the pasta according to the instructions on the packet (better if al dente). Drain well.

  2. Meanwhile, heat the coconut oil in a large deep frying pan set over a low heat. Cook the garlic for 1 minute, add half of the parsley, lemon zest and juice and the water, then turn up the heat and let the sauce bubble away for 5 minutes until it reduces.

  3. Add the prawns and cook for 4-5 minutes until pink. Stir in the remaining parsley and the spinach, then season to taste.

  4. Add the cooked pasta and toss everything together.
